Since 2002, I've been a vegetarian.  Well, if I'm being honest, there's been some serious backsliding from time to time when it comes to seafood, but I'd say in the last 14 years I've maintained about an 80% success rate at ovo-lacto vegetarianism.  But I've known for a long time that, in order for my diet to align with my feelings about animals, I would need to switch to an entirely plant-based diet.

DAY 1:

To that end, I'm going to attempt to keep a food blog in order to have some accountability.  I figure, if I need to post about what I've eaten all the time, I'll be too embarrassed to fall off the wagon.  So I'm starting today (because as we used to say in the 1970's, "Today is the first day of the rest of your life.")

I don't have a photo of lunch, but it was a salad composed of arugula, red quinoa, chick peas, corn, tomatoes and cukes (dressed with oil and vingar).  Snacks - a banana and two clementines. 

For supper, I made pasta shells with sautéed broccoli rabe, cannellini beans and cherry tomatoes from my garden.  To prove I'm working hard to bust the evil cheese habit, I included my veggie parm in the photo.  All in all, this was satisfying and yum.  Even my omni husband gave it a thumbs up.
